This makes for a wonderful dessert, party dish, or tasty snack. I have to admit, I've even used it as a side at supper time, as a way to get #3 to eat something besides bread and pasta!
There are a couple of little tweaks I make to fit our tastes and ease the process. To cut the tortillas, I lay them on a cutting board and roll over them with my pizza cutter. I also spray both sides of the tortilla, throw the wedges into a ziploc bag of the cinnamon sugar mixture, and shake to coat.
The fruit mixture goes into my food processor for just a couple of quick manual spins. Otherwise, the chunks are just way too large. This makes it more salsa-like. I also think the salsa is best if it sits for at least a couple of hours in the refrigerator, so that the flavors can meld together.
This time of year, I would highly recommend starting at Aldi to shop for ingredients if you live near one. Their $.99 packages of tortillas are hard to beat, and they typically offer some of the best deals on fresh fruit in this area.
